About This Wine
The Vivanco family, one of the most important names in modern tequila, has been cultivating estate-grown agave in Arandas, the highland plateau of Jalisco, since at least 1929. Known for their dedication to quality, sustainability, and terroir-driven production, they launched their own label, Viva México, in 1994 from their distillery El Ranchito (NOM 1414). Now, after decades of crafting some of the most beloved tequilas behind the scenes, the family’s own tequila has finally arrived stateside.
Produced from 100% estate-grown Blue Weber agave matured 6–8 years, the agave is slowly roasted in traditional brick ovens for 48–50 hours, then crushed using a roller mill. Fermentation takes place in open-air stainless steel tanks using a proprietary yeast blend—including champagne yeast—and deep well water. The family’s innovative “Mozart method” of playing classical music during fermentation is said to create a more harmonious and nuanced spirit. The tequila is then double-distilled in copper pot stills to preserve complexity and purity.
This blanco offers vibrant tropical aromas of guava, peach, dragonfruit, and grapefruit zest, complemented by fresh herbaceous notes of lemongrass, fennel, tarragon, and menthol. The palate is silky and dense, with flavors of cooked agave, sweet parsnip, orange peel, vanilla bean, and a distinctive minerality reminiscent of wet slate and saline.
