Distillerie Capitoline, a tiny-but-mighty Roman distillery founded in 2018, is driven by chefs, biologists, and natural wine lovers on a mission to capture “the excitement, scents, and flavors of contemporary Rome.” Cerasa is their playful twist on tradition — a fortified red wine infused with Amarena cherries.
The cherries are vacuum-macerated with raw sugar, then blended into a Montepulciano base wine from La Lupinella in Tuscany. A touch of neutral grain spirit is added before aging in barrels that once held Capitoline’s vermut rosso, allowing the liqueur to evolve for a month. The result: rich cherry aromatics, deep fruit, and a natural sweetness balanced by structure — a delicious cherry-kissed liqueur for sipping over ice or mixing into cocktails.
