From 40-year-old Palomino Fino vines in the historic Pago de Carrascal, just 20 km from the Atlantic, this 2024 white showcases the fresh, coastal side of Jerez. Hand-harvested in multiple passes and fermented mostly in stainless steel with a small portion fermented in sherry cask, the wine is then aged on the lees for added texture. Agile, lively, and distinctly Jerez in character, it shows bright fruit, subtle minerality, a faint saline edge, and an impressively textured mid-palate. Fresh, expressive, and incredibly drinkable, this is Palomino meant to be enjoyed young — with sea air in every sip.
