About This Wine
P.G.I. Pangeon – Kavala, Greece. 100% Assyrtiko.
The vineyard’s name, Asvestaria — meaning “limestone” — is a nod to the soil beneath the vines. Once a quarry for plaster-making, this land is now home to some of the region’s most expressive Assyrtiko. The combination of limestone-rich earth, cooling sea breezes by day, and mountain winds by night creates a remarkable microclimate that shapes the wine’s tension and depth.
In the glass, it shows a medium lemon hue with golden highlights and aromas of lemon blossom, citrus, herbs, white-fleshed fruit, and a hint of brioche. On the palate, it’s bright and focused, with high acidity and a mineral backbone balanced by notes of spice and fresh-cut grass. Stainless-steel maturation on fine lees for six months adds texture and complexity.
Elegant yet powerful, Asvestaria Assyrtiko is perfect with seafood and Mediterranean dishes — think grilled seabream, spaghetti alle vongole, or chicken with peppers. A wine that shines now but promises even more with age.
